It was evaluated the influence of sex and age in proteinogram from newborn and young ostriches raised round Araçatuba, São Paulo. The total protein and its fractions in plasma samples were determined from 45 ostriches divided into three groups: 1-|15 days, 15-|30 days and 30-|70 days old. The total protein was measured using refractometric method and fractions were determined by electrophoresis on cellulose acetate membranes. There were not significant differences between males and females in values obtained for total protein in plasma (PPT), albumin, a, b, g-globulins. In ostriches until 15 days old, the PPT and fractions were higher (p<0,05) than those of ostriches with more 30 days old. The PPT and g-globulin of youger ostriches were higher (p<0,05) than those intermediate age. The results showed the metabolism of proteins in ostriches suffer significant changes in the first 70 days of age.
